Grown on high-density estate vineyards rooted in ancient Table Mountain sandstone, the grapes are hand-harvested and allowed to ferment spontaneously using wild native yeasts. To protect its sharp, linear minerality and pure fruit character, the wine undergoes no malolactic fermentation and avoids heavy charring, aging instead in custom-designed, untoasted French oak barrels. The result is an elegant, chiselled Chardonnay defined by a tight mineral core, vibrant citrus zest, white peach notes, and a crisp, crystalline finish built for exceptional cellaring.
